I need a new SD card for my Olympus Pen E-P7. Im looking at a 128GB.
Can i use a Micro SD card in an adaptor?
What are the pro's and cons?

I've done that in the past, but only as a temporary arrangement. The more mechanical connectors in the system, the less reliable it's likely to be!
 
They're also _generally_ not as fast, if you need the more modern faster standards. I don't know what standard a E-P7 supports, you'd need to check.

Some of the newer standards use additional pins on the card, so it's not enough for the card to support them the adapter must also.

I don't know of any pros of using a microSD card, unless you wanted to re-use the card in other devices at some point. But cards are relatively cheap, so doesn't seem worth it.
 
Echoing the others - yes, but experience suggests that the MicroSD are less reliable than their full-size equivalent (also tend to be slower - not sure I've ever seen a UHS-II MicroSD either
