Well done capturing this.
I find flies do generally stick around for a while when they are blowing bubbles and also seem less likely to be disturbed by me moving around etc.
As to why, this post at diptera.info is over a decade old, but it is the most detailed discussion I'm aware of and I don't know that the state of knowledge has moved on much since then.
